Saybrook was founded in 1635, with only 24 people at first. Saybrook was a code name. It was called Saybrook because Lord Say and Seal and Lord Baron Brook bought what is now called Saybrook, and kept it for a place of refuge for people that didn't want to die England. And since the land originally belonged to them, they called it Saybrook.
